Who said you can't feed a large family a healthy meal without breaking the bank?! This is a family favorite at our house! We have 6 kids with our 7th on the way so when we have them all over for dinner (we have a blended family so they don't all live with us) we have A LOT of mouths to feed! I love to cook but now that I am 8 months pregnant my energy isn't what it used to be! Plus I should add that at my weekly OB appointment this morning the doctor told me that I have an Irritable Uterus! WHAT?? lol I didn't even know that was a thing!! Only me! Sooooo I REALLY LOVE that this meal feeds us all and requires very little work on my part!!

I start by putting a whole chicken in the crockpot when I get up in the morning. Being pregnant I try to sleep in (don't judge!) so it usually goes in between 8-9am. I put the chicken in with NO water or broth (the chicken will make it's own broth and we will use it later for the rice!) I rub the raw chicken with butter (we love butter from Europe like Kerrygold) and spices, set it for 6-8 hours and go about my day!

Next I fill my rice cooker with Organic, Gluten Free, Non-GMO Brown Rice. We really like Yoga Organics Brown Rice. I LOVE my rice cooker because just like my crockpot I can throw the ingredients in, turn it on and forget about it until its done!

 I used about 2 cups of rice to feed 5 of us tonight. (We don't have 3 of the kids with us for dinner tonight)

Remember that chicken broth I told you about earlier?? Well here is where we use it! Instead of using water to cook the rice I add in that broth!! It makes the rice cook a little on the Al Dente side just an fyi. I think my family likes the rice more then the chicken!!

Once you add your broth to the rice you turn it on, sit back and wait for your amazing dinner to be done! Mike and the kids are currently at Lexi's (his 14 year old daughter) basketball game and will be home soon. They will walk in to a ready to eat meal and think that I spent hours preparing it! Shhhhh please don't spill my secret! ;) Score for mom!!  I think I spent more time writing this for you all then I actually did cooking today! So I will be in my favorite spot on the couch with my feet up awaiting their arrival if anyone needs me! Until next time...
