Soups are one of my favorite things to make. I love making a big batch and freezing for later. My 11 year old Kaylee loves to take leftovers in a thermos in her lunch. Wedding soup is one of my all time favorite soups. I was craving it the other day so I made it with what I had around the house. It turned out SO good! I hope you all love it!!
6-8 Mason jars of bone broth or chicken broth (I used both that I had in my freezer and I make my own, If you don’t make your own you can find one on Amazon like this one)
4-6 Organic carrots (chopped)
2-3 Cups organic spinach (chopped)
1 Cup crockpot chicken (chopped)
1 Package ground chicken
1/4 Cup almond flour
1 Package gluten free orzo
Redmonds real salt, organic garlic, turmeric, onion and black pepper to taste
1-2 Cups kale (chopped)
1 Cup raw cheddar
Combine bone/chicken broth, carrots and seasoning to crockpot and bring to a boil
Mix ground chicken, egg, almond flour and raw cheddar and one cup spinach in a bowl. Form mini meatballs and drop into boiling broth to cook
Cook orzo in separate pot, drain, rinse and add to stock pot with broth and meatballs
Add chopped chicken, kale, remaining spinach and orzo to stock pot and stir. Reduce heat and simmer for 45 minutes to an hour.
Serve hot and enjoy!!
